OUR ORIGINS
A family tradition
The production of Azafrán Trevelin began with small tests in 2016, as a family business headed by Paola Ahumada, who was inspired by her father, a reference in the family kitchen, who used saffron based on his maternal experience in traditional Arabic, Al-Andalus, and Spanish cuisine.
With much testing and research Paola, who is a professional gourmet, chose a type of saffron from Spain and decided to bring the bulbs from there to use in her business.


THE SOUTHERNMOST SAFFRON IN THE WORLD
After having lived and worked for 12 years in Comodoro Rivadavia in the oil industry, Paola and her husband, Matías, decided to settle in Esquel, where he was born and raised.
When they moved to the mountains, they planned to start a limited production project of a crop that could be used in gourmet cooking, in the small farm they had purchased in the rural area of Trevelin.
Saffron turned out to be the ideal choice, because in addition to being anchored in the family culinary tradition, it requires minimal amounts of water, which is an advantage in the area, and it adapted excellently to the climate and soil conditions.
Thus, in a natural environment surrounded by native forest, the southernmost saffron production in the world was born.

We love our products
Saffron production requires special attention from the moment the bulbs are planted until the delicate pistils of the flower, from where we get our precious spice, are obtained. That is why the harvest is carried out completely manually.
At Azafrán Ruta 17, we are dedicated to offering 100% agroecological products. Our commitment to sustainability drives every decision we make, and we are happy to share our passion for our crops and for caring for the environment where we produce them.
